DIRECTION FOR MAKING CHICKEN AND PLANTAIN FRITTATA: First wash and peel the plantain, then cut into desired shapes, fry in hot oil till brown and set aside. - Heat up frying pan and add 4tbsp of vegetable oil, start frying the shredded chicken, for about 3 to 4 mins add the onions, tomatoes and pepper, fry for about 4 mins, then add the bell pepper, stir and turn off heat
- Spray cooking spray in a baking dish and layer fried plantain, (I planned for 2 layers) add the first batch of fried tomatoes sauce on top of the plantain and pour the first batch of milk, place the final batch of plantain on top of the first batch and add the remaining tomatoes sauce and pour the remaining whisked egg
- Send the baking dish into the oven for 10mins, remove from oven and garnish with fresh parsley leaf.
With a knife, tear the peeled plantain open from top to down, place on a flat surface and press with the cookie cutter.
