Red red is simply fried plantains with beans stew. I am guessing the reason for the name is due to the fact that the beans stew is made with palm oil and the plantains are also fried with palm oil. Thus, red red leaves a red hue on plates when served.
To get started with this particular recipe, we must prepare a few ingredients. You can cook fried beans with plantain using 7 ingredients and 8 steps. Here is how you cook that.
The ingredients needed to make Fried Beans with Plantain:
- Take 2 cups beans
- Get 3 ripe plantains
- Get 2 medium-sized onions
- Make ready 5 scotchbonnet peppers
- Get 2 cooking spoon of palm oil
- Take 2 stock cube
- Make ready to taste Salt
In a mixing bowl, slice ripe plantain in whatever shape you desire, add salt to taste, mix thoroughly to combine. Transfer the fried plantains to a paper towel-lined plate as they're ready; set aside. Coat a large nonstick frying pan or cast iron skillet lightly with oil and heat over medium heat. These plantains were pan fried with oil just covering the surface of the pan.
Instructions to make Fried Beans with Plantain:
- Pick out the debris and stones, wash properly, place in a pot and add a good quantity of water.
- Bring this to a boil for 3-5 minutes, sieve out the water, add fresh water (enough to cook the beans) and continue cooking. This process is to to help reduce the possibility of the having bloating and gas after eating the beans.
- When the beans softens, add the diced plantain (potato/yam, this is optional though), also add the stock cubes and salt.
- Continue cooking till the water dries up, by that time, the plantain or whatever you're using should be done.
- In another pot, heat up the palm oil, add the onions and fry till fragrant and translucent, add the blwnded fresh pepper and fry for few minutes, then add the crayfish. (don't fry for too long after adding crayfish, to prevent it from burning).
- Pour the cooked beans into the oil and mix thoroughly for at least 3 minutes (you can mash the beans in the process or you leave it as it is).
- Bring it down and serve with some fried plantain, rice etc.
- This is totally optional but I like to sautée some diced onions and fresh pepper in red oil, drizzle it on top after serving, then add some utazi leaves.
The oil was hot enough for a quick fry. Adding your plantains when the oil is not hot enough is a recipe for disaster. The Plantains were sliced thin so they cook in no time. These sweet, warm treats paired wonderfully with the stewed black beans. The keys to successful fried plantains are choosing ripe fruit and using the right pan, oil, and heat.
