- Next, add the blended crayfish and seasoning then add the cooked beans and start to stir for about five minutes
- Lower your heat and let it simmer for another three minutes, taste and adjust then put off the heat

I am guessing the reason for the name is due to the fact that the beans stew is made with palm oil and the plantains are also fried with palm oil. Thus, red red leaves a red hue on plates when served. This is technically not a guess right. When it starts to foam, add plantains. Sauté plantains until they are tender and edges are golden.
