- Once you are done frying the yam and plantain, reduce oil from the frying pan and leave at least 2tbs worth in the frying pan
- Add onions, tomatoes and pepper, then stir for about 3mins, add a dash of salt and stock cube if you wish.
- Pour whisked eggs into the frying pan and scramble tills the eggs and tomatoes is thoroughly mixed up and the egg is fried
- Serve plantain and yam fries with tomatoes scrambled eggs
