  6. Get 2 cubes Maggi

Pull the peel back from the plantain. Use a sharp knife or a mandolin to thinly slice the plantains. Season with salt and pepper to taste. Last week I made some out of green ones - so green they were hard to peel.

Instructions to make Ekpogede(dry ripe plantain):
  1. Blend the ripe dry plantain in a mill,mix with hot water in a big bowl.
  2. Mix it very well till no lump is found.
  3. Add salt to taste,stockcubes,palmoil and crayfish.
  4. Wash the leaves and carefully fold it then scoope the mixture in it.
  5. Fold very well and place in a pot with boiling water.
  6. Cover tge pot,and boil it for 30minutes with medium heat.

The result: dry, chalky, not-quite-edible cardboard. I recommend letting your plantains get at least a bit ripe! Thinly slice plantains into chips with a mandoline. Throughout the Caribbean and many Spanish-speaking countries, fried ripe plantains are served with meals mainly as a side dish or as a snack. For example, in the South American country of Guyana, fried plantains are traditionally served with the national dish, cook-up rice: rice, beans, and meat cooked with coconut milk.
