  1. Peel plantain and set aside, wash and blend tomatoes and pepper and onions though not so smooth, parboil to reduce water and set aside. Dress croaker by getting rid of its scales and gills, wash, use a knife to tear it in bits open and set aside, pound spices the add a water, squeeze and extract the local juice then set aside.
  2. Lay fish flat in a pan or pot, pour in the little water extract from the local spices, add pepper and seasonings and sliced onions and a little palm oil and allow to steam slightly, use a spatula and turn the other side to do same for a few mins then bring down. This is so it would absorb the taste all the way in and not only on the skin.
  3. Carefully place the fish on a grilling iron, add a little more seasoning and dry pepper, sprinkle sliced onions on top, use a table spoon to scope the stock in the pot and pour on the fish, add the plantain along side and allow tho grill on medium heat for about 15mins, turn the other side and do same till its cooked and dry, oh yum!
  4. For the gravy, put palm oil in a pot on medium heat, wen a bit hot, put onions, allow to fry slightly and den add the blended paste and fry for a few mins, add seasonings and allow for abt 2mins and dasol.
  5. Serve and chill like I did 😁
