- Slice your Yam,and cut into halves, Do same to your plantain. Put in a pot and boil.,You can add a little salt when it's almost done.This cooks for like 15 - 20mins When the Yam and Plantain is soft,put off the heat,sieve out the excess water and cover the Pot back.
- Food prep your ingredients for easy access to them. Slice you Green pepper in round shapes to give that fancy look. Slice your carrots round. Slice your tomatoes round. Then dice your pepper and onions. Break your eggs into a separate plate and add your pinch of salt and 1 stock cube,plus half Teaspoon curry.
- It's best to use a Non stick small frying pan,so the shape can come out. Set your pan on the burner(not too high heat). Pour in your groundnut oil. Heat it up. Add your onions,fry for a minute. Add your Red pepper,mix and fry for a min, then add your Tomatoes. Mix and fry, add your Rosemary, Coriander seeds, Thyme, Curry (the remaining half),then 1 stock cube. Mix and taste it. Whisk your Egg together.
- Pour it over your tomato mixture then pour in your carrots and arrange your Green pepper over it, Reduce the heat. Add your onions to the middle of the green pepper,allow it cook on low heat. When it's done, you can dish it out and serve. Food is ready.
