The ingredients needed to make Plantain waffles:

The look and texture are very similar to grain-based waffles. The only giveaway that the waffles are made with plantain flour is the telltale taste of plantains when you take a bite. If you would prefer to reduce the amount of resistant starch and lessen the plantain flavor, feel free to substitute half the flour with cassava starch instead. You can use plantain flour or another flour for the plantains if you can't get access to real plantains.

Instructions to make Plantain waffles:
  1. Slice plantain, boil for 3-5 minutes till tender, put in a bowl and mash it
  2. Add egg, milk, sugar, baking powder and flour
  3. Mix all together, get your waffle mould put on a baking tray and grease with oil or butter, add the batter and bake for 20mins
  4. Let cool and Serve

One note about plantain flour - it does provide a little bit more dense and chewy texture and it works best with. Sweet Potato Plantain Waffles will turn out best when using a green-yellow plantain.
