You can use plantain flour or another flour for the plantains if you can't get access to real plantains.

- Slice plantain, boil for 3-5 minutes till tender, put in a bowl and mash it
- Add egg, milk, sugar, baking powder and flour
- Mix all together, get your waffle mould put on a baking tray and grease with oil or butter, add the batter and bake for 20mins
- Let cool and Serve
One note about plantain flour - it does provide a little bit more dense and chewy texture and it works best with. Sweet Potato Plantain Waffles will turn out best when using a green-yellow plantain.
