Starting at one end of each, slide thumb between peel and plantain, then gently lift plantain to loosen from peel. (Do not remove plantains from peels.) Return plantain halves, cut-sides up, to baking dish. Aborrajados are sweet ripe slices of plantain that have been stuffed with cheese, coated in batter and deep-fried. Some people like to add a slice of guava paste to their aborrajados, which pushes them towards the dessert category. Transfer to a plate lined with a paper towel to drain the grease.

- Fry minced meat with spices as listed above (marinate if you want)

- Cut the plantain horizontally and stuff fried veggies and minced meat. Place stuffed plantains in a baking tray and sprinkle mozzarella cheese on the stuffed plantains.
